Korean-style Pork Rib and Potato

- 1 pound pork short ribs
- 2 medium potatoes, cut into 1-inch cubes
- 1 tablespoon vegetable oil
- 2 cups water
- 2 tablespoon Korean soybean paste
- 3 star anise
- 2 stalks green onion, chopped for topping
- For marinating the pork ribs:
- 3-4 ginger slices
- 4-5 cloves of garlic, cut into slices
- 1 tablespoon vegetable oil
- ½ teaspoon salt
- ½ teaspoon sugar
- Marinate the pork ribs with the ginger, garlic, oil, salt and sugar for about 10 minutes.
- Heat oil in a pan over medium heat, add in the marinated pork ribs and stir fry for about 5 minutes until browned.
- Carefully pour in the water, and add the star anise and the Korean soybean paste, gently stir to mix well.
- Turn to high heat and bring the water to boil( took me about 2 minutes)
- Turn to medium heat and simmer for about 10 minutes with lid off, stir occasionally.
- Stir in the potato and cook for another 15 minutes with lid on, until the potato has softened, stir occasionally during the cooking process.
- Top with green onion to serve.
