Pork with Green Pepper

- a quarter pound pork sirloin, cut into strings
- 3-4 long green chili pepper, sliced
- 2 tablespoons vegetable oil for cooking
- For marinating the pork:
- 1 tablespoon vegetable oil
- 1 tablespoon cooking wine
- ¼ teaspoon potato starch
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- For seasoning:
- 1 tablespoon oyster sauce
- 1 tablespoon water
- ½ tablespoon dark soy sauce
- 1 teaspoon vinegar
- ¼ teaspoon sugar
- Whisk oil, cooking wine, potato starch, salt and pepper in a bowl and marinate the pork for about 10 minutes.
- Mix oyster sauce, dark soy sauce, water, vinegar and sugar in a bowl to serve as the seasoning later.
- Heat oil in a pan over medium high heat, stir in the pork and cook for about 2 minutes until changes color and remove from the pan.
- Turn to high heat, and add the green pepper into the pan, stir fry for about 2 minutes until soft.
- Turn the heat back down to medium-high, add the pork back into the pan and pour in the sauce, stir for another 1-2 minutes, remove from pan and serve.
