Shredded Zucchini Salad with Sesame DressingThis week I am sharing a shredded zucchini salad with sesame dressing recipe.

This incredibly easy salad dish takes only five minutes to make. However, the taste won’t let you down.

Let’s jump right in!

Shredded Zucchini First, we need to cut the zucchini into shreds.

One of the easiest ways to shred the zucchini or many other vegetables is with a vegetable slicer.

Chinese sesame dressingOnce the zucchini is ready, next is making the salad dressing. This sesame dressing is a really popular sauce in China. It can be made by mixing together sesame paste, soy sauce, rice vinegar, sesame oil, toasted sesame seeds and sugar.

This sesame dressing can be used in many other salad dishes as well. I am a big fan of this versatile sauce. You can enjoy it either as a salad dressing or a sauce for cold noodles in the summer.

Shredded Zucchini Salad with Sesame Dressing imageIf sesame paste is hard to find in your area, I recommend substituting it with the tahini sauce.

Here’s another appetizer dish I made with this tasty sesame dressing. Pouring it over soft tofu, you can easily make another popular Chinese dish – sesame tofu!

Drizzle on top hot chili oil for a spicy kick and sprinkle with freshly chopped green onion, this is another tasty summer dish that can be made in no time!

Ingredients
  • 1 zucchini, shredded
  • Dressing:
  • ¼ cup sesame paste
  • 2 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • ½ tablespoon sesame oil
  • ½ tablespoon toasted sesame seeds
  • ½ teaspoon sugar
Instructions
  1. Shred the zucchini with a vegetable slicer or a cutting knife and set aside.
  2. Whisk sesame paste, soy sauce, rice vinegar, sesame oil, toasted sesame seeds and sugar in a small bowl as the salad dressing.
  3. Pour the mixture on top of the zucchini, mix well and enjoy!

I tried it and it is so delicious! Thank you so much. I just have a question: since I had my sesame oil in the fridge, will I have to keep the leftover dressing in the fridge or can I leave it in the counter to avoid solidifying without the oil getting rancid? Thank you in advance!

Hi Lorea,

I would leave the leftover dressing in the fridge and take it out 30 min before eating or heat it up in the microwave real quick, hope it helps!
